Preparing My Filipino Breakfast: An Almusal Reminds Me of My Home

There's nothing quite like the aroma of a traditional Filipino breakfast to transport me back to my roots. Today, I'm sharing my video of preparing a classic almusal Pinoy style. My officemate generously gave me some dried dilis, dried pusit, and danggit from Leyte, and I decided to make the most of these delicious treats on this beautiful Sunday morning.

Tuyong Dilis: A Crunchy Delight

Tuyong dilis are dried anchovies, a staple in Filipino cuisine. These small fish are sun-dried to perfection, resulting in a crunchy and savory delight. Tuyong nokos or dried squid is another favorite in the Filipino breakfast repertoire. This combination is a perfect side dish that enhances the flavors of the dried seafood. Of course, no Filipino breakfast is complete without a strong cup of black coffee. The robust, rich flavor of the coffee ties the meal together, providing a comforting and invigorating start to the day.

Join me on an exciting culinary adventure as I attempt to cook Kimchi for the very first time! From selecting the freshest ingredients to navigating the art of fermentation, watch as I dive headfirst into Korean cuisine right in my own small condo that lacks a proper and spacious kitchen. The process of making Kimchi is both an art and a science, requiring careful preparation and patience. I began by sourcing the best Napa cabbage from the nearest public wet and dry market in Mandaluyong City, where I reside, along with daikon radish and Korean red pepper flakes from the closest Korean grocery store. Ensuring that my Kimchi would have the most authentic flavors possible was a top priority.

As I embarked on this journey, and after watching numerous YouTube videos, I quickly learned that the key to great Kimchi lies in balancing flavors and mastering the fermentation process. Preparing the ingredients was a meticulous task, from salting the cabbage to creating the perfect spice paste. Mixing the cabbage with the paste, I felt the anticipation building—would I achieve that quintessential balance of spice and tanginess? The real challenge, however, was the fermentation. Allowing the Kimchi to ferment in my small fridge, I eagerly awaited the transformation of my creation into the iconic Korean dish.

Throughout this adventure, there were moments of uncertainty and stress as a first-timer. My studio-type condo was filled with the pungent aroma of fermenting vegetables. Despite the challenges, I knew that this experience was as much about the journey as it was about the final product. The process taught me a lot about patience and the intricacies of fermentation.

Finally, the moment of truth arrived. Tasting the Kimchi for the first time was a revelation—it was a burst of flavors, a perfect harmony of spice and tanginess that danced on my palate. It wasn't just a culinary success; it was a testament to the joys of cooking and trying new things. This experience has ignited a passion for Korean cuisine and the art of fermentation. Discovering Gogodak Korean Chicken Shaw Branch: A Flavorful Adventure

After we attended the Pride Parade on June 22,2024 , the said program was cut short due to heavy rain, my friend Joy Abarico and I decided to grab our dinner and we embarked on a culinary adventure to the Gogodak Korean Chicken Shaw Branch. Nestled in a bustling area along Shaw Blvd, San Antonio, Pasig City , this eatery has quickly become a favorite among locals for its delicious Korean cuisine. As soon as we arrived, we were greeted by the inviting aroma of various restaurants around the area. Aside from the rainy night, we managed to walk and locate the place. Our eyes were immediately drawn to the Friend Share combo on the menu, a delightful assortment of three flavorful Korean chicken varieties, pickled radish, and a small botle soft drink, all for the reasonable price of PHP 599. It was the perfect choice for our dining experience.

The Friend Share combo did not disappoint. Each chicken flavor was distinct and mouthwatering, providing a perfect balance of spice, sweetness, and savory goodness. The pickled radish added a refreshing crunch that complemented the rich flavors of the chicken. I have tasted the three flavors - cheese , BBQ and sweet & sour.  The combo was more than enough for the two of us, making it a great value for money. We even divided it equally and got some to bring back home. To complete my meal, I ordered a side of rice for PHP 25 and decided to try the Egg Ramyun for PHP 139, hoping for a comforting bowl of soup to round out the meal. However, the Egg Ramyun tasted like an instant grocery-bought ramyun, lacking the depth and authenticity I had hoped for.

Despite the disappointing Egg Ramyun, our overall experience at Gogodak Korean Chicken Shaw Branch was incredibly satisfying. The Friend Share combo alone is worth a visit, offering a delicious and affordable taste of Korean cuisine. For those craving authentic flavors, this place is a must-try. I suggest to use food delivery service like Food Panda or Grab Food as the establishment have 2-3 available tables to occupy. Well, it is open 24 hours for delivery and dine in.  If you find yourself in the area, I highly recommend stopping by and indulging in their delectable chicken dishes since it is just 10 minutes walk from Crossing. Whether you're a Korean food enthusiast or just looking to try something new, Gogodak Korean Chicken is sure to leave your taste buds wanting more.

However, there are potential downsides to relying too heavily on memorized answers. One significant risk is that the responses may come across as robotic or insincere. Judges and audiences can often tell when an answer is overly rehearsed, which can detract from the contestant's authenticity and genuine personality. After our exhausting night shift, my friend Joy and I decided to treat ourselves to a hearty breakfast at Dell's Cafeteria, located at 3 World Square, Upper McKinley Road, McKinley Hill, Taguig City. Known for its affordable and diverse food options, Dell's has become a favorite among local employees and visitors. The cafeteria's casual and inviting atmosphere provided a much-needed respite as we anticipated a satisfying meal.

Dell's menu caters to a wide range of tastes, and we were eager to sample its offerings. Joy opted for the classic Filipino breakfast, Tapsilog, which consists of marinated beef, rice, and a sunny-side-up egg. The beef was tender and flavorful, more of sweet side, complemented perfectly by the garlic-infused regular rice (not fried) and the richness of the egg. Meanwhile, I chose the Chicken Mole, a dish that surprised me with its bold, savory-sweet sauce and perfectly cooked chicken. The portions were generous, providing excellent value for money.

To top off our meal, I treated Joy to some Coffee Jelly for dessert and fruit beers to quench our thirst. The Coffee Jelly was a delightful blend of rich coffee flavor and creamy sweetness, a perfect end to our breakfast. The fruit beers were refreshing, offering a light and fruity twist that balanced out our savory dishes. While we were enjoying the conversation, we gradually felt the 3 percent of alcohol and we started to loosen up.  Dell's efficient service ensured that our food arrived promptly, allowing us to enjoy our meal without any delays.

As the credits rolled, I found myself reflecting on the powerful themes of love and loss portrayed in the movie, which resonated deeply with my own experiences.

Inspired by the raw emotion of the film, I decided to channel my feelings into a creative outlet. I picked up my recording equipment and recorded a cover of Ben&Ben's "Sa Susunod na Habangbuhay," the hauntingly beautiful song featured in the movie's soundtrack. The song's poignant lyrics and melody perfectly captured the essence of the film, allowing me to express the swirling emotions I felt. This journey was not just about giving back; it was about embracing the power of love and compassion to transform lives.

The Emotional Journey of Cutting My 5-Year-Old Dreadlocks

 For the past five years, my dreadlocks have been more than just a hairstyle—they were a part of my identity, a symbol of my journey, and a source of pride. I never envisioned myself without them, let alone with short hair. However, life has a way of throwing curveballs when you least expect it. It all started with a persistent itch on my scalp that lasted for two weeks. At first, I dismissed it as a minor inconvenience, perhaps just a case of dandruff. But one fateful day, I discovered a lice egg nestled in one of my locks. Panic set in, and I immediately searched my hair, only to find a multitude of lice. In that moment of shock and frustration, I made the difficult decision to cut my beloved dreadlocks.

As I stood in front of the mirror, scissors in hand, a whirlwind of emotions swept over me. Memories of every twist and turn in my hair, every compliment and criticism I had received, flashed before my eyes. I thought about the misconceptions I had tirelessly defended—that dreadlocks don't attract lice, that they're as clean and manageable as any other hairstyle. Yet, here I was, facing the very situation I had argued against. It was a humbling experience, to say the least. The frustration of seeing my efforts undone by tiny, relentless invaders was overwhelming, but I knew there was no other choice. With each cut, I felt a mix of sorrow and relief, as if shedding not just hair but the weight of a prolonged struggle.

Now, with short hair and a fresh perspective, I reflect on this unexpected turn of events. Losing my dreadlocks was a heartbreaking experience, but it also taught me valuable lessons about resilience and adaptation. Life doesn't always go as planned, and sometimes, we have to let go of what we cherish most to protect our well-being. My scalp is now healthy and itch-free, and I'm embracing my new look with a renewed sense of confidence. While the journey wasn't easy, it has made me stronger and more adaptable.
